Sapling Yard , Entrechat Sparkling 2019

This relatively new label is the project of Winemakers Carla Rodeghiero [also a microbiologist] and local Malcolm Burdett
The name Sapling Yard comes from the Sapling Yard creek which flows through their cool-climate Braidwood [NSW] vineyard
This Sapling Yard 2019 Entrechat sparkling is made from the traditional trio of Pinot Noir, Chardonnay and Pinot Meunier.
It's vinified along the Methode Traditionelle and reflective of the ZD style
Hints of blush and persistant petillance set the tastebuds tingling in anticipation.
Autolytic toasty aromas, texture and flavours reflect the 2 year lees contact.
The mid-palate astringence allows the freshness and complexity of the wine to linger.
Its crisp acid grab cuts through a range of dishes and was a good foil to our platter of smoked salmon, charcuterie and crudites.
It is a refreshing sparkling of quality and promise well worth seeking out and enjoying over the coming warmer months.
